Edible black ants (Polyrhachis vicina) are prized for their bright, citrusy flavour. Popular in Chinese medicine and gourmet cuisine, they’re packed with protein and zinc, and get their tangy, lemon-pepper taste from natural formic acid.
For centuries, black ants have played a role in Chinese medicine, where they’re thought to strengthen the immune system, reduce fatigue, and provide various other health benefits. Naturally high in protein, these ants are a nutritious addition to any diet.
Our black ants are responsibly sourced from trusted foragers in China. After careful cleaning and inspection, we pressure cook and dehydrate them to ensure quality and safety. The ants are then packed and sealed with moisture and oxygen absorbers, preserving their freshness for at least 12 months.
Taste & Texture:
Black ants have a soft texture with a distinct tangy, citrus-like flavour reminiscent of lemon or vinegar. Their unique taste adds a lively, refreshing note to any dish.
Nutritional Value:
They are high in protein (approx 55%) and contain high levels of zinc, iron, manganese, magnesium, and potassium.
Uses:
Garnish: Used by chefs on salads, fish, or desserts to add a citrus burst.
Seasoning: They can be ground up to provide a sour kick to dishes.
Snack: They are consumed roasted or dried on their own.
A single bag contains 5 grams of Wild black ants. After dehydration, each black ant weighs approximately 0.04 grams.
